Crab Soup

INGREDIENTS

–  2kg crab
– 100g butter
– 150g chopped onions
– 20g garlic
– 100g thyme
– Lemongrass
– 100g Coriander
– 15 Curry leaves
– 200g tomato purée
– 100g ginger
– 100g white wine
– Olive oil
– Salt
– Pepper

INSTRUCTIONS

Step 1: In a drizzle of olive oil, sweat the onion, garlic, ginger, thyme, carrot leaves, and lemongrass.
Step 2: Add the tomato paste, and the crab, and shortly after, add the butter to enhance the taste.
Step 3: Deglaze with white wine, adjust the seasoning and add the fish stock. Let simmer for about thirty minutes.
Step 4: Add the coriander after 30 minutes.
