INGREDIENTS

-300g of rice
-4 Large shrimps
-12 mussels
-150g of squid cut into large strips
-2 chicken legs cut into pieces
-200g of fish cut into pieces
-2 onions chopped
-200g of chopped tomatoes
-2 bell peppers (red & green) cut into thin strips
-100g peas
-Thyme
-Laurel
-Garlic
-Parsley
-Poultry stock
-Olive oil
-Turmeric
-Salt & Pepper
-3 lemons

Optional:
-Chorizo
-Smoked marlin
-White wine

INSTRUCTIONS

Step 1: Season all the meat with garlic, salt, and parsley.
Step 2: Brown the rice in olive oil and turmeric and set aside. Brown the chicken and set aside.
Step 3: Sweat the onions then add the red and green peppers and tomatoes and sweat for a few minutes.
Step 4: Add the rice, chicken, and salt.
Step 5: Moisten with the broth and cook for about 30 minutes
Step 6: At the end of cooking, add the seafood
Step 7: Add the peas and sprinkle with white wine (optional)
Step 8: Cover and cook until the rice is cooked

The Chef’s special touch: If necessary, add a little stock during cooking. This will allow the rice to be well cooked.
