Prawn Tempura



-20 big raw shrimp or other base (squid, fish, vegetables)
-40 grams of flour
-30g of cornstarch
-1 egg
-5cl of ice-cold sparkling water
-1 pinch of salt
-5g of baking powder
-150g breadcrumbs 
-1L of frying oil


Step 1: Peel the shrimp, keep the tails, and add salt and pepper.

Step 2: In a bowl beat the egg and add the cornstarch, flour, a pinch of salt, baking powder and sparkling water. Stir well with a whisk (the dough should be fluid and should not have lumps, otherwise pass your dough through a sieve).

Step 3: Heat the oil to 180°, and pass the shrimps in the paste by the tail, then coat them with breadcrumbs if you wish and plunge them in the frying oil and cook until they are well golden (approximately 2 to 3 minutes).

Serve with your favorite sauce.

The Chef’s special touch:
You can add spices or aromatic herbs in your dough that will bring additional flavors.
