Vegan Fried Rice



– 400g Cooked tofu
– 60g Oil
– 300g Sweet potato, diced
– 1 Bell bell pepper, diced
– 2 Green onions, chopped, white and green separated
– 120g White cabbage
– 2 Cloves of garlic, chopped
– 450g of rice
– 1 Lime peel
– 15g Lime juice
– 45g of soy sauce


Step 1:- In a large frying pan, brown the tofu in 30g of oil and set aside.
Step 2:- Tenderize the sweet potatoes in the remaining oil, add the bell pepper and the white of the green onions.
Step 3:- Cook for 2 minutes and add cabbage and garlic. Continue cooking until the cabbage has fallen off. Season with salt and pepper.
Step 4:- Add tofu, rice, lime zest and juice and soy sauce.
Step 5:- Reheat over high heat, stirring. Adjust seasoning.
Step 6:- Divide rice among bowls and sprinkle with green onions.
