Step 1: Preheat the oven to 200°c.
Step 2: Mix the pumpkin with the onion, garlic, pepper and a dash of olive oil, and bake for 25 minutes.
Step 3: Spread half the cheese on half of each tortilla, add the vegetables and the chilli.
Step 4: Spread the remaining cheese over the vegetables and fold the tortillas in half over the filling.
Step 5: Brown two quesadillas at a time for 2-3 minutes on each side in a lightly oiled pan and set aside on a plate.
The Chef’s special touch:
You can add a cumin chicken shred to your dish. Some people also like to dip the quesadillas in homemade guacamole.
