1 production cycle: It takes one year from the start of production to finish the entire production of Maotai-flavor liquor, when only twice grains are feeding providesed. During the process of grain feeding, it will not take out the liquor and no grain is added during the process of liquor extraction. This is like “deposit in installments
while withdrawing in a lump sum.”
2 grain feedings: Xiasha (First grain feeding), the first time of adding in the red tassel sorghum, on a half amount. Generally, the first feeding start as from
Chongyang Festival, then leave it for 30 days of fermentation. Cash (Second
grain feeding), for the second time, the distiller’s grains of Xiasha after 30 days of
fermentation in the cellar are called Shusha “ripen grains.” Mix 50% sorghum and
50% Shusha evenly, and start to roast the wine after 30 days of fermentation. After the finishing production of Caosha, no red tassel sorghum will be added during the wine extraction process. This is so-called “second grain feeding.”
9 times steaming: Red tassel sorghum has to go through 9 times of steaming (steamed
grain gelatinization) from the beginning to the end of 7 times of roasting, that is, 2
times of steaming of the grains, and 7 times of cooking of the extract liquor.
8 fermentation periods: Red tassel sorghum has 8 fermentations from the beginning to the end of the 7 times of roasting. Each time it is steamed, there is one fermentation. Since the glutinous grains after 7 times of liquor extraction are not
directly replaced by fermentation, there are only 8 fermentations.
7 times of liquor extraction: In the entire production cycle, 7 times of liquor extraction, that is, the first excitation, the second extraction to seven extractions.
Because of the high yield and good quality of three-time liquor, four-time liquor, and
five-time liquor, we call it “Dahui liquor” and 6-time wine as “Xiaohui liquor


High-temperature Qu (yeast agent) making: Qu (yeast agent) is the soul of the liquor, the main aroma components of Maotai-flavor mainly come from Qu. In the aspect of Qu making, only Maotai-flavor liquor requires the Qu making temperature to reach 63℃ or higher, so it is called high-temperature Qu making.
High-temperature stacking: It is to capture the beneficial microorganisms and wine-producing Qu in the production environment and air. This process is also
called “secondary Qu making.” The stacking process is a unique production process for Maotai-flavor liquor. During the stacking process, the temperature of the wine can rise to about 50°C.
High-temperature fermentation: The fermentation temperature in the process is required to reach above 40°C. Due to the different fermentation temperatures in the
upper, middle, and lower layers of the mud pit, the taste of the wine is also very different.
High-temperature distilling: The temperature of the Maotai-flavor liquor distilling is generally 37 ℃ ~ 42 ℃. High-temperature distilled liquor will evaporate easily volatile substances and collect the high-boiling substances in the liquor to the greatest
extent, which is also the key to the long-lasting aroma of Maotai-flavor liquor in an
empty cup.
Long production time: It takes one year from Chongyang Xiasha to the end of the entire production for producing Maotai-flavor liquor. This is also the one-year base
the liquor production cycle, which refers to “1” in the brewing process characteristics of
“12987.”
Long storage time: It takes at least five years for the Maotai-flavor liquor to enter the factory from the raw materials to the finished product, which is the longest storage time of all flavored liquors
