You will need:
25g Rassam spices
½ Tbs cumin seeds
½ tsp whole red mustard
3 dry chillies (broken in pieces)
1 tsp red sugar
75g Yellow peas whole, soaked in water
1 tomato, diced
1 small onion, diced
2 garlic cloves, chopped
3 Tbs tamarind pastes soaked in water and discard the seeds
A few curry leaves
Chopped coriander stems and coriander leaves
In a pressure cooker, pour oil and sauté onion over low / medium flame.
Add garlic, cumin and stir well.
Add curry leaves, chillies, coriander stems, yellow peas and mustard seeds, stir well.
Add Rassam spice and 1 cup of water and allow cooking for 2 – 3 minutes.
Add, tomatoes and 1 liter of water. Lock pressure cooker and allow cooking for 25 – 30 minutes. Remove cover and stir while adding sugar, tamarind juice and salt (if necessary).
Before serving, sprinkle with coriander leaves.
