Step 1:- Whisk together the coconut milk, yogurt, chia and brown sugar and chill for about 30 minutes
Step 2:- Place the mixture in small ramekins, add pieces of mango and sprinkle with grated coconut
Chef’s tip: The longer the mixture sits in the fridge, the more the chia seeds will thicken, but be careful not to leave it in the fridge for more than 2 days.
I sometimes add a little almond milk if the mixture is too compact
