Mimosa Eggs with Cilantro

INGREDIENTS

– 4 Hard-boiled eggs
– 1 Teaspoon olive oil
– 1g paprika
– Salt
– 10g chopped coriander
– 2 Egg yolks
– 1 Teaspoon of mustard
– 30g sunflower oil

INSTRUCTIONS

Step 1: Cut the hard-boiled eggs, remove the yolk, and set them aside.
Step 2: Put in a bowl the egg yolks and the mustard and mix the whole in the oven by adding progressively the sunflower oil.
Step 3: Mix the yolks, mayonnaise, coriander, and paprika in a bowl. Adjust the seasoning.
Step 4: Put the mixture in the place of the yolk in the hard-boiled egg whites and set it aside in a cool place for 1 hour.

The Chef’s special touch:
For the mayonnaise, you can also put all the ingredients in a measuring glass and mix it with a hand blender to have an express and creamy mayonnaise!
