Pasta with arrabiata

INGREDIENTS

– 400g Potatoes 
– 400g peeled tomatoes 
– 1 large Pepper
– 2 garlic
– 1 onion
– Olive oil
– Poultry or vegetable stock 200g
– 80g Pecorino or Parmesan cheese
– Salt
– Pepper

 

INSTRUCTIONS

Step 1: Heat oil over medium heat and sauté onion and garlic for 2 minutes.
Step 2: Add the chili and the peeled tomatoes and stew for 3 minutes.
Step 3: Add the chicken stock and bring to a boil and simmer for 20 minutes.
Step 4: Add salt and pepper and turn off the heat.
Step 5: Serve over al dente pasta.
Step 6: Sprinkle with cheese
