INGREDIENTS

– 250g fresh salmon
– 35g soy sauce
– 10g rice vinegar
– 10g sesame oil
– 300g sushi rice
– 400g water
– 100g mayonnaise
– 30g sriracha sugar
– 50g grated cucumber
– 50g grated carrot
– 100g diced avocado
– 15g coriander
– 1 lemon

 

INSTRUCTIONS

Step 1: Cook the rice in 400g of water and a pinch of salt for about 15mins. Let it rest for one minute, and drain the rice.
Step 2: Mix the mayonnaise and the Sriracha sauce and set aside.
Step 3: Mix the soy sauce, sesame oil, and rice vinegar and marinate the salmon for about 15 minutes.
Step 4: In a bowl, arrange the rice and all the ingredients on the sides of the bowl.

The Chef’s special touch: 

You can replace the rice with quinoa or the salmon with shrimp.
