Rigatoni with Bolognese Sauce

INGREDIENTS

– 2 onions
– 1 carrot
– 2 cloves of garlic
– 80g of celery
– 400g of ground meat
– 2 bay leaves
– 150g of tomato concentrate
– 600g of peeled tomatoes
– 80g of red wine
– Pinch of sugar
– 4 sprigs of thyme
– 400g of pasta
– 100g of parmesan cheese
– olive oil
– Salt
– Pepper

INSTRUCTIONS

Step 1: Cook the pasta and keep the water.
Step 2: Sauté the onion, garlic, carrot and celery in olive oil for 5 minutes and add the ground meat.
Step 3: Adjust the seasoning.
Step 4: Add peeled tomatoes, tomato paste and bay leaf.
Step 5: Deglaze with red wine and add the chicken stock.
Step 7:  Add a pinch of sugar, thyme and reduce for 30 minutes.
Step 8:  Add pasta and mix well.
Step 9: Add grated parmesan cheese for the dressing.

Chef’s special touch:

If the sauce is too thick, add some of the pasta cooking water.
