Onion Soup

INGREDIENTS

– 1 kg of chopped onions
– 50 g of butter
– 1 sprig of thyme
– 2 bay leaves
– 1 big spoon of flour
– 100g of red wine
– 30g of cognac or dark rum

– 1 lt of poultry or beef stock or vegetable stock
– Salt
– Pepper
Finishing touches
– 200 g of gruyere cheese
– Slices of toasted bread
– 2 cloves of garlic

INSTRUCTIONS

Step 1:- Melt butter in a large pot and sauté onions until golden brown
Step 2:- Add thyme and bay leaf
Step 3:- Add flour (singe) and mix well
Step 4:- Deglaze with wine and cognac and let reduce
Step 5:- Add the chicken, beef or vegetable stock
Step 6:- Bring to a boil and reduce by half
Step 7:- Season with salt and pepper.

Finishing touch
Step 8:- Rub each crouton lightly with garlic
Step 9:- Divide the soup among the bowls
Step 10:- Add a little cheese
Step 11:- Spread croutons on each soup and sprinkle with cheese.
Step 12:- Bake in oven or until cheese is melted and golden.
