Scamorza is a spun cheese made from cow’s milk. It is recognized as a traditional food product from the regions of Campania, Basilicata, Abruzzo, Molise, Apulia and Calabria (where it takes the name of “provola”). It generally has the shape of a flattened sphere, weighing 0.15-0.25 kg and is also produced in a smoked or stuffed version. The origin of the term scamorza could come from “capa cut” or “severed head”
