You will need:
1½ Tbs (30g) Masala½ Tbs cumin seeds A small cauliflower or broccoli, divided into florets of about 3 cm (blanched) 200g paneer, cut into 1 cm cubes 100g peas (fresh or frozen) 500g chopped tomatoes 1 medium onion, sliced½ Tbs ginger paste 1 Tbs garlic paste Chillies (optional) Cooking oil Water Chopped fresh coriander
Heat oil in a utensil and fry paneer.Gently flip paneer and leave lightly browned on all sides. Remove and drain on absorbent paper.Heat 2 Tbs of oil in a utensil over medium heat and add cumin and sauté the onions until they become translucent. Add Masala and allow to cook for few minutes, stir well.Add chillies, garlic and ginger and tomato, paneer, peas and cauliflower or broccoli and some water.Place a lid and leave to cook for about 15 minutes or until the sauce thickens.Remove from heat and sprinkle with coriander.Serve hot with basmati rice or pharata Variant: Meat / Chicken Curry or Seafood.
