RECIPE
You will need:
5 Tbs (50g) Tikka masala
700g chicken breasts
200 ml tomato puree
1 red chilli, crushed (optional)
2 medium onions, chopped
1 Tbs garlic paste
1 tsp ginger paste
2 Tbs lemon juice
100ml cooking cream
4 Tbs yogurt
Cooking oil
½ cup water
Chopped fresh coriander
Method:
Cut chicken into cubes and mix with ½ sachet Tikka Masala, yogurt and lemon juice, 2 Tbs oil, 1 Tbsp coriander, 1 Tbs onion, salt to taste and mixed well. Leave to marinate for 20 minutes in refrigerator.
For tikka sauce, heat oil in a pan and sauté the remaining onion, garlic, ginger, coriander.
Add remaining Tikka Masala, ½ cup water and sauté for 2 minutes.
Add tomato, chilli and allow to cook for 15 minutes.
Add cream and stir well.
Meanwhile, thread chicken pieces on to wooden skewers, then grill in a pan on medium heat. Turn the skewers occasionally until well cooked.
Remove grilled chicken pieces from skewers and add to the sauce, then simmer for 5 minutes.
Sprinkle with coriander.
