SERVES 4-6

INGREDIENTS

5 Eggs

590 ml Milk 

100 g (220 ml) Almond Flour

2 Tablespoon Flour

2 Tablespoon Maple Syrup or Honey (optional) 

1 Teaspoon Baking Powder

1 Pinch Sea Salt

2 Tablespoon (30 g) Butter or Coconut Oil

 

To Serve:

A handful fresh Strawberries

A few fresh Mint Leaves, torn

125ml Yoghurt 

Coconut Flour 

INSTRUCTIONS

  1. Preheat the oven to 420°F (220°C). 
  2. Place a 8×10-inch (20×25 cm) baking dish inside the oven. 
  3. Use a whisk to beat the eggs in a large bowl until frothy. Add milk, flour, maple syrup, baking powder and sea salt. Keep whisking until smooth.
  4. Now place the piece of butter into the warm baking dish in the oven. Remove the dish as soon as the butter has melted and pour it into the batter. 
  5. Pour the batter into the dish and place back in the oven and bake for around 30 minutes or until nicely browned and set. 
  6. Let cool slightly and serve with fresh berries, fresh mint and a dollop of yoghurt. Dust with coconut flour for a fancier presentation.
