INGREDIENTS

1 leg of lamb, approx. 1.5kg

Honey 

Black soy sauce 

Cumin

Cinnamon 

Clove 

Cardamom

Coriander seeds 

Butter 

Mint 

Thyme

Parsley

Rosemary 

Garlic paste

Salt

 
 

INSTRUCTIONS

Step 1: Preheat oven to 100°c

Step 2: Rub the leg of lamb with parsley, thyme and bay leaves.

Step 3: Salt the leg of lamb and season with garlic paste.

Step 4: Cook leg of lamb in the lamb juices until golden brown 

Step 5: Mix butter, mint, parsley, thyme and rosemary to make herb butter

Step 6: Brush the leg of lamb with the herb butter and place in an ovenproof dish with cinnamon, cloves, bay leaves and coriander seeds.

Step 7: Bake for 45 minutes 

Step 8: Glaze with black soy sauce, honey and cumin powder

Step 9: Glaze the leg and return to the oven for a further 10 minutes. 

Leave the leg to rest for an hour before serving.
